On the 25th of March, day of the Annunciation of the Blessed Mary, Barbastro celebrates the “Fiesta del Crespillo”. A “crespillo” is a typical dessert made with starflower (borage) leaves battered with a dough made from egg and flour.
The ritual dessert is eaten on this day “in order to fertilize the olive trees” and with a view to provide a good harvest of olives.
In some villages it is customary to save the oil used to fry the “crespillos” in order to spread it over the olive tree shoots with a view to obtaining a generous harvest.
In the area of the Cultural Park other gastronomic festivals are also celebrated, such as the “Fiesta de la Chireta” in Pozán de Vero and the Mushroom Gathering Day in Barbastro.
